Daddy's Basic Crepes

Here's a recipe for crepes that's really easy, and very versatile. They can be used for any meal, and even dessert.


Ingredients:
  • 1 Cup Flour
  • 2 Eggs
  • 1/2 Cup Milk
  • 1/2 Cup Water
  • 1/4 teaspoon Salt
  • 2 Tablespoons Butter ~ Melted

Directions:
  1. In a large mixing bowl, whisk together the Eggs, Milk, Water and Butter. Gradually add the flour and salt, whisking as you go. Whisk until smooth.
  2. Heat a lightly oiled frying pan over medium heat. Scoop approximately 1/4 cup batter into the frying pan. Tilt the pan with a circular motion so the batter coats the pan evenly.
  3. Cook the crepe for about 2 minutes, until the bottom is light brown and the top firms up. Loosen with a spatula, flip and cook the other side. 

Now it's time to use your imagination. You can fill and top these crepes with virtually anything. For breakfast fill with fruit and top with powdered sugar. Lunch, roll up a hot dog and a slice of cheese. For Dinner, fill with chicken and ricotta cheese. Dessert, pie filling with a whipped cream topping. So many things can be done with these crepes. For a sweeter wrap, add sugar and cinnamon to the crepe batter. Another hit with the kids and easy enough that they can help out in the preparation. Enjoy.
